AUGUST SALAD

August is my favorite month and this flavor combo fits right in there <3
This salad was on repeat through the end of September, and it’ll make its return when winter feels endless. I looooove this combo. Both refreshing and satisfying! Best enjoyed in August… but might bring you a little summer when you need it most!
Makes 2.
Ingredients
Spring mix + Arugula, big handful
Cherry tomatoes, 10
Persian cucumbers, 2
Corn, 1 cob (or 1/2 cup!
- if you have a cob, the microwave trick will save you so much time! Cut off the stalk end, microwave for 3 minutes. Let sit 1 minute and husk it! Viola! Otherwise frozen corn, thawed!
Feta, 1/4 cup (maybe a sprinkle of gorgonzola, too!)
Dill, fresh, measure with your heart! cut over salad. Use ALOT!!! It’s so good!
Sweet bell peppers, 1/2 cup - I always do a combo of colors!
Red onion, 1/4 cup
Sunflower seeds, a sprinkle
Pepitas, a sprinkle
Dill olive oil (you can use plain, too!)
Recipe
Prepare corn.
Chop all veggies.
Build salad in a bowl!
Eat
This salad pairs really well with chicken - I had grilled chicken left over from the night before so I cut it into the salad. Love!
