Crispy Chicken Tenders
For lunch every day, I try to have a big salad with quality protein. I find that a lighter/ balanced lunch helps me make it through my afternoon most productively. I was getting sick of the same old, same old so I decided to spice things up. I made these UNREAL crispy chicken tenders for lunch and now we're hooked! 15 min to a healthy meal that tastes great. Hope you love them!
Start by trimming and tenderizing 1 lb organic chicken breasts into then, even sizes. Then, start prepping your breading station. You'll need 3 separate bowls.
Bowl 1:
1/4 c organic all purpose flour
1 tsp salt
1/2 tsp garlic powder
whisk to mix
Bowl 2:
2 eggs, whisked
Bowl 3:
1/2 cup organic bread crumbs
1 tsp salt
1 tsp garlic powder
black pepper (to taste)
crushed red pepper (to taste)
thyme (to taste)
Dip each tender into bowl 1, followed by bowl 2 (allow the egg to drip off slightly), followed by bowl 3. Heat a thin layer of Avocado oil in a shallow skillet on medium-high. Once hot, add the tenders and cook 2-4 minutes each side or until golden on the outside and cooked through.
Serve with a big salad or dip in buffalo sauce (Jonah's preferred method lol).
