Salty Cinnamon Granola

The breakfast isle at the grocery store is one of the greatest disappointments of feeding yourself as an adult. I love breakfast! And it's important for me to start my day with something that will turn my brain on, fill me up and NOT cause a mid day crash. The breakfast isle... doesn't provide any options for me. Cereal and granola are LOADED with sugar. So I had to make my own.


I love the balance that the salt brings to this mix, but if you prefer a sweeter (less salty) granola feel free to omit or halve the amount you see below. Also know that you can easily swap in your favorite nuts in place of the ones I chose!


*note - raw nuts work best for this recipe! If you have already roasted nuts, do not bake them with the granola. Add for the final 5 minutes to coat all the flavors.


Ingredients:

2 c organic oats

1/2 cup coconut oil

1/2 c pistachios

1/2 c raw walnuts or pecans

1/2 c raw macadamia nuts

1/2 c raw pepitas

4 t maple syrup + 2 t (you can also opt to omit maple syrup completely for no-sugar option!!!)

1 t vanilla

2 t cinnamon

1 t salt

1/2 cup hemp seeds

1/2 cup goji berries


Method:

Preheat oven to 350 degrees. Mix oats and nuts (except the pepitas). Add melted coconut oil, maple syrup, vanilla, cinnamon and salt to the mixture and combine until everything is well coated. Bake for 15 minutes. Stir granola and ADD pepitas. Bake for 5 more minutes. Stir granola and add any remaining nuts (if they were pre-roasted. Pat granola down firmly into the pan and drizzle with remaining 2 t maple syrup and give a sprinkle of cinnamon. Bake for 3 more minutes or until golden brown. Remove from oven and sprinkle hemp seeds and goji berries over the top. Let cool for at least 45 min!!! If you're short on time, stick into freezer for at least 15 minutes. Letting the granola cool completely ensures you'll get nice chunks :) ENJOY!

I LOVE this granola with plant or nut milk, my favs are hemp milk and almond milk. Top with berries, goji and a sprinkle of salt.
