20 MIN DIN

This is a Sunday night staple. A busy weeknight staple. A meal that is super healthy and low maintenance but NOT lacking on flavor. Also, MINIMAL CLEAN UP involved. You're welcome.


Serves 2

Ingredients:

Rao's Arrabbiata Sauce - or any quality tomato sauce!

Frozen, organic broccoli

Organic Chicken Sausage - or any sausage you prefer! Usually come in a pack of 5

Greens! I love spring mix

Zoodles - zucchini noodles! Or noodles of choice


Method:

Pre-heat oven to 400 degrees. Chop Chicken sausage into bite size pieces and spread on a baking tray with frozen broccoli. Roast for 12 minutes. After initial roast, toss broccoli and add a drizzle of avocado oil, and a sprinkle of garlic powder and salt. Roast for 8 more minutes and broil for 1 (or until edges of broccoli starts to crisp!)


While sausage and broccoli roasts, heat skillet to medium-high and flash fry zoodles for 3-4 minutes until al dente. When zoodles are cooking through and slightly soft, cover with tomato sauce (I use about half the jar). Turn heat down to low and let simmer.


Prep bowl with greens and drizzle with olive oil. Layer in zoodles and chicken sausage. Give a fresh crack of pepper and a sprinkle of parm. Bon Appetit!
